Sunshine Vinaigrette

Fresh Thyme, Marjoram, local greens, and bright Calendula flowers inspired this dressing that tastes like Sunshine in a jar! This recipe was created by AnastasiyaMonaco.

Ingredients:

• orange - both for its zest and for its juice!
• 1/4 cup apple cider vinegar

1-2 tablespoons of raw almond butter
• 1 tbsp honey
• 1 tbsp Dijon mustard
• 1 tsp grated ginger
• Thyme/Marjoram
• Salt/Pepper/Cayenne
Method:
First, chop herbs finely. In a glass jar, whisk orange juice and zest, vinegar, honey, mustard, olive oil, ginger, and spices until fully emulsified. Add herbs, close with a tight-fitting lid, and shake it until well combined. Store refrigerated in an airtight container for up to 1 week.


Note:
To add brighter notes to this dressing, play with adding lemon/lime juice and zest, cinnamon, and anise.
