Glorious Zucchini Pasta



This plant dish is full of flavors featuring raw zucchini noodles and superfood sauce for a light, refreshing, and easy-to-make healthy meal! Serve it with more of a bright and herbaceous green pesto, sprinkled with pine nuts this pasta will leave you feeling light, refreshed, and feeling your best!

Green Glory Sauce (pesto)

For this sauce I used :

- 1 cup presoaked pumpkin seeds

-bunch kale

-1 cup basil

-1 garlic clove

-1/3 cup Veggie Broth

-1/4 teaspoon black pepper

- salt to taste 


Process all the ingredients until desired consistency in a food processor. 


Serve Zucchini Noodles with a slice of lemon on the side.

Note: Remember don’t add any kind of acid to green pesto to prevent it from darkening. It is better to squeeze lemon juice over at the time when you are ready to eat.
