Creamy Hemp Hearts Dressing
This Creamy Hemp Hearts Dressing is nutritious, herby, and delicious- packed with healthy fats, proteins, and various minerals such as phosphorus, potassium, sodium, magnesium, sulfur calcium iron, and zinc. Use it to spice up your favorite salads or as a dip with veggie platters! Make this with fresh dill, parsley, or basil!

INGREDIENTS
1 cup Hemp Hearts
1/2 cup water and more to thin the dressing
4 tablespoons lemon juice
2-3 tablespoons apple cider vinegar
1/2 cup orange or grapefruit juice
1 garlic clove or 2-3 tablespoons chives
1 teaspoon Himalayan salt
1 teaspoon Dijon mustard
1 cup fresh flat-leaf parsley (or dill or basil)
lemon zest to taste
INSTRUCTIONS
Place all ingredients, except the herbs in a blender.
Starting on low speed, gradually increasing, blend until creamy and smooth.
Gradually add more water to achieve the desired consistency.
Add the herbs, blend until chopped up finely, or blend longer for creamier consistency.
Use less water for a “dip” consistency. If you’d like a looser salad dressing, add a little more water or oil. Served it chilled. The dressing will thicken in the refrigerator. On the following day, you may add 1-2 tablespoons of lemon juice to bring out flavors.
