Raw Beet Salad

Ingredients:
4-5 beets, shredded
2 cups walnuts, presoaked overnight, grinded
1-2 garlic cloves, grated
1-2 inch ginger root, grated
1/2 hot red pepper, chopped
1/4 cup apple cider vinegar
1/4 cup coconut aminos
1 -2 avocados (optional) to serve
Method:
Use a food processor to shred beets and to grind walnuts. Use a microplane to grate ginger and garlic. Once you have your Mise En Place, combine all ingredients in a large bowl. Cover the salad with the lid and let it sit for a couple of hours to marinate the flavors. Transfer the salad into a glass jar with the lid and keep it refrigerated. Serve with sliced avocados.
Note:
Hot red pepper can be replaced with 1/4 teaspoon cayenne pepper.
I recommend using good-quality royal oil to increase the healing profile of this salad.
