Cumin Carrot Salad
This salad is bursting with flavors from fragrant cumin, fresh turmeric, and ginger roots. The combination of sweet and savory elements creates a refreshing and addicting taste.
Carrots are well known for their superpower to keep our eyes healthy. Carrots are rich in beta-carotene, a compound that our body changes into vitamin A, which is essential for our eye’s health. Beta-carotene helps to protect our eyes from the bright sunlight and lowers our chances of cataracts. Because of the high content of fiber, this salad can be one of the best foods to have during detoxes or in general to keep our intestines nice and clean. Ingredients:
5-6 carrots, shredded
1 cup hemp seeds
1-2 garlic cloves, grated
1-2 inch fresh turmeric root, grated
1-2 inch fresh ginger root, grated
1/2 teaspoon cumin
1/4 teaspoon cayenne
salt to taste
1/4 cup apple cider vinegar
1/4 cup olive oil
Method:
Combine all ingredients in a large bowl.
Note:
Instead of apple cider vinegar lemon juice can be used( 3-4 tablespoons)
