Carrot Cake Chia Pudding

This chia pudding is infused with the delicious fall flavors we love ! It is like a carrot cake in a glass!

Ingredients:

Carrot layer:

1/4 cup raw cashews, soaked 6-8 hour

1/2 cup grated carrots

1 cup coconut milk

1 cup water

1 tbsp vanilla

1/4 cup date syrup

2 tbsp fresh ginger juice

1/4 teasp cinnamon

pinch   salt

1/4 cup chia seeds

1/3 cup raisins

1/3 cup walnuts, pre soaked, chopped

Caramel layer:

1/2 cup cashews, soaked 6-8 hours

1/2 cup coconut cream

1/4 cup date syrup

vanilla

Topping:

bee pollen 

Method:

1. Combine all ingredients except chia seeds, walnuts and raisins in a high-speed blender. Blend until smooth. 

2. Pour this mixture into the bowl, add chia seeds, chopped walnuts and raisins. Stir every few minutes over the next 30 min. until it  become pudding like consistency. 

3. To make a caramel topping, in a high speed blender process cashews, coconut cream, date syrup and vanilla until smooth. 

4. Transfer carrot layer in to a glass jar, layer with caramel top. Chill in a refrigerator for few hours or over night. 

5.Top with chopped walnuts and bee pollen.
