Blueberry Chia Seeds Pudding

This delicious chia pudding loaded with blueberries and infused with lemon makes a lovely superfood breakfast or healthy desert! 

Ingredients:

“Cream”layer

1/4 cup cashews presoaked 6-8 hours

1/2 cup coconut yogurt

1 cup water

1 tbsp vanilla

1/4 cup chia seeds

2-3 drops essential lemon oil

Blueberry jam

2 cups blueberries, fresh or frozen

juice from one lemon

peel from one lemon

1/3 cup of raw honey

2 tbsp chia seeds

Method:

1.Combine cashews, yogurt, water, vanilla in a high speed blender. Puree until smooth. Transfer this mixture in to a bowl, add chia seeds, lemon oil and  mix very well. Continue to stir every few minutes to prevent uneven thickening of the seeds. It will take about 30 min. 

While this layer is thickening you can make blueberry jam.

2.To make a jam add all ingredients except  chia seeds to a blender, process to break down blueberries and combine all ingredients. Add chia seeds, mix well. Continue to stir every few minutes. Let the jam to thicken.

3.Layer everything in a glass jar, top with fresh blueberries and enjoy!
