Matcha Lime Chia Pudding

This Matcha infused pudding is irresistible! The perfect balance of sweet with refreshing and tangy lime!

Ingredients:

1/4 cup cashews presoaked 6-8 hours

1 cup water

1 cup coconut milk

1/4 cup maple

1 tsp matcha

peel and juice of 1 lime or more 

1/4 cup chia seeds

Topping:

kiwi, grapefruit, banana 

Method:

1. Combine all ingredients except chia seeds in a high-speed blender. Blend until smooth.

2. Transfer this mixture in to a bowl, add chia seeds. Stir every few minutes over the next 30 minutes until it  become pudding like consistency.

3. Transfer matcha pudding in to a glass jar, refrigerate for at least 3 hours or over night.

Serve with sliced fruits of your choice.
