Yogi's Heaven Soup

This Soup is so GOOD! It is an absolute nourishing heaven for vegans. I had some beautiful vegetables: green peas, zucchini, and very good-looking spinach that inspired me to come up with this soup idea. In my garden, I found a lot of Thyme and Marjoram that were about to get frosted on. I used regular Thyme as well.

Serves 4

Ingredients:

2 medium size zucchini, chopped

1 avocado

2 cups  green peas, fresh or frozen, thawed

 5-6 cups fresh spinach

1 scallion, white and green parts

4-5 cups water, start with 3 and add more until desired consistency is achieved. 

1-2 tablespoons lime juice

fresh herbs: 1 1/2 teaspoon Marjoram and 1 1/2 teaspoon Thyme, reserve some for garnishing

1 teaspoon salt or more to taste

¼ teaspoon ground black pepper

Instructions:

Blend all ingredients, except the garnishes in a high-speed blender until smooth.

 Taste and adjust the seasoning with salt and pepper.

Garnish with a swirl of cashew cream, a teaspoon of healthy oil, and fresh thyme.

Note: This time I mixed 1 tablespoon of tahini with lime juice, coconut aminos, a touch of fresh garlic, and 2 tablespoons of water. This is what I used to decorate soup along with a touch of coconut cream and pine nuts.
