Spring Cabbage Salad with Peas and Dill

Back home, in South of Russia, we used to make this salad every Spring and early Summer with fresh dill and small prickly cucumbers. Those are the best kind! Now, we don’t need to wait for the Summer, you can buy ingredients for this salad all year around. Amazing time we live in! I like to use this salad as a side dish with baked vegetables, rice or quinoa dishes. Try it as a topping on Tacos! Delicious!

Ingredients:

1 small head of cabbage, shredded finely

1 cucumber thinly sliced

2-3 garlic cloves, smashed with a flat side of the wide bladed knife and chopped finely

3 tbsp of fresh dill, chopped

1/2 cup of raw apple cider vinegar

1/2 can of green peas

extra virgin olive oil

sea salt

Directions:

In a large bowl massage cabbage, garlic, apple cider vinegar and a pinch of salt.

Add sliced cucumbers, dill, peas and olive oil to the salat bowl and mix all ingredients together. Enjoy!
