Spinach Pepita Dip

This colorful and full of flavor and nutrients dip is nice with crackers and sliced crispy vegetables like carrots, cucumbers, turnips, fresh zucchinis.Garnish it with a sprinkling of sesame or hemp seeds.

Ingredients:

2 garlic cloves

2 cups chickpeas, sprouted

4 cups fresh spinach

1 cup pumpkin seeds, soaked 4-8hr

1/3 of full fat coconut milk from the can

fresh lime or lemon juice, to taste

salt and freshly-ground black pepper, to taste

cayenne pepper, to taste

Directions:

In a blender or food processor, combine all ingredients and process until smooth, stopping to scrape down the sides, as necessary. Thin the dip with more coconut milk if necessary. Season to taste with lime/lemon juice, salt and pepper.
