Spicy Hot Chili
This Spicy Chili is smokey hot, going to warm you up from head to toes!
After playing with many different recipes I came up with this version. This Chili is hearty, flavorful and addicting. Best when served with cashew sour cream, fresh avocado and parsley or cilantro.
Ingredients:
1.5 cups of dry kidney beans, presoak them night before.
Or 3 cans of organic kidney beans
2 tablespoons of avocado oil
1 white onion diced
5 garlic cloves, finely minced
1 medium size carrot, diced
1 jalapeno, finely diced ( remove seeds)
1 teaspoon paprika
1 teaspoon cayenne
1/2 teaspoon chipotle
1 teaspoon cumin
1 teaspoon of dry oregano
1 package of organic five grain Treehouse Tempeh, sliced
1 large yam diced
1/2 cup of sun dried tomatoes, soaked in 1 cup of hot water for 1 hour
1 14-ounce can of diced tomatoes
2-3 cup water or broth
2 tablespoons maple syrup
1 teaspoon sea salt
Cashew sour cream, diced avocado and fresh parsley or cilantro for garnishing.
Directions:
1. Prepare beans. The night before, presoak 1.5 cups of beans in 4 cups of water. next day, rinse them well by changing water a few times. Cook beans until they are soft but not mushy. You can use caned beans, you will need 3 cans.
2. Prepare tomatoes sauce. In a blender, combine presoaked sun dried tomatoes with water , diced tomatoes from the can and additional 1 cup of water. Blend until smooth.
* In the summer time, when fresh tomatoes from the garden are available, I prefer to use those. Any kind of tomato sauce can be used. Sun dried tomatoes add brightness and richness to any dish.
3. In a heavy enameled cast iron pot sauté onion, half of garlic , carrot and jalapeño in avocado oil until the onion is golden and translucent.
4. Add in all of the spices and herbs, yams and tempeh. Sauté for 5 min, stirring consistently to prevent sticking to the bottom.
5. Add in tomato sauce, kidney beans, maple syrup and salt . Cover with the lid and allow to cook on low for another 25-30 min. Adjust water and salt if needed. Remove from the heat and stir in the rest of the garlic.
6. Serve this Deliciousness with Cashew Sour Cream, sliced Avocado and Parsley.
