Kale Salad with Lemony Tahini Dressing

Recipe by Anastasiya Monaco. This delightful Kale Salad combines earthy and robust kale with the creaminess and citrusy zing of lemon tahini dressing. Sprinkle a generous amount of pomegranate seeds on top!

The combination is so perfect, I honestly, can eat it every day!

Ingredients:

1 Bunch Kale

1 cup Pomegranates Seeds

1/4 cup Pine Nuts

1 Avocado

Dressing:

3 tablespoon Tahini

3 tablespoons Coconut Yogurt, plane

3-5 tablespoon Coconut Amino Acids

1-2 Garlic Cloves, finely minced

1 Green Chilli, finely minced

1/4 cup Lemon Juice

Lemon Zest of 1 Lemon

1/4 cup water to adjust consistency

Method:

  1. For the dressing, combine all ingredients in a large enough jar with the lid. Shake it well until the dressing is well blended. Taste it and adjust the seasoning. You may want to add some more lemon juice or coconut aminos. Every time I make it, it tastes different but always so delicious!

  2. Prepare the kale by washing and drying it with a kitchen or paper towel. Remove stems ( use them for juicing), slice leaves into 1/4-inch shreds.

  3. In a big salad bowl massage kale with your hands until kale is slightly wilted. Now add a generous amount of dressing to the bowl and combine until all kale is well coated.

  4. Serve with pomegranate seeds, toasted pine nuts, and sliced avocado.
