Green Quinoa Salad
Adding more greens into our diet makes us feel alive, awake, and glow. This gorgeous nutrient-dense salad is like a super charge for our energetic frequency. Fresh herbs add powerful healing benefits to this salad. Parsley is an excellent detoxifier while dill is rich in antioxidants and a good source of vitamin C.
Ingredients:
2 cups cooked quinoa ( millet can be used instead)
1 small onion , thinly sliced
1 tbsp olive oil
1/4 tsp salt
1/4 tsp ground cumin
1/2 cup unsalted pistachios, toasted and chopped ( can also try pumpkin seeds instead)
2-3 tbs green onion, sliced
1 fresh green chile, finally sliced
Red pepper flakes, to taste
Juice of 1 lime
salad greens of your choice
Herbal paste:
(any combination of herbs can be used, play with different variations)
1 cup chopped fresh parsley
1/2 cup chopped fresh dill
2-3 tbs fresh tarragon, chopped
2-3 tbs fresh mint, chopped
1 garlic clove
1/2 cup olive oil
Method:
1. Cook quinoa according to instructions.
2. Sauté the onions in the olive oil on medium heat until golden.Add salt and cumin, mix well. Set aside to cool down.
3. To make an herbal paste:
-Combine herbs and garlic in a food processor and process until finely minced.
-While the food processor is running, slowly add the olive oi, process until the mixture is combined.
4. In a medium bowl, combine quinoa with herbal paste. Now add cooked onion, pistachios, green onions, chile, lime juice and red pepper flakes and gently mix everything together.
Adjust seasoning to your taste. Serve on a bed of greens.
