Mango Chia Pudding

This chia pudding is like sunshine in a jar. There is so much flavor in this pudding, you’ll want to make it over and over again!

Ingredients:
  • 2 mangoes, peeled and sliced
  • 1 tbsp coconut oil, melted
  • 1/2 cup full fat coconut milk
  • 1/4 cup chia seeds

Topping:
sliced oranges, pineapple, grapefruit

Method:
1.In a small bowl combine coconut milk and chia seeds. Stir every few minute over the next 30 min. until it becomes pudding like consistency
2.Combine mango and coconut oil in a high-speed blender.Puree until smooth
3. Pour mango cream in to a bowl, add chia seeds/coconut milk mixture and mix very well
4. Transfer mango pudding in to a glass jar, refrigerate for at least 3 hours or over night.
 Top with your favorite fruit
