Matcha Lime Chia Pudding

This Matcha infused pudding is irresistible! The perfect balance of sweet with refreshing and tangy lime!

Ingredients:
  • 1/4 cup cashews presoaked 6-8 hours
  • 1 cup water
  • 1 cup coconut milk
  • 1/4 cup maple
  • 1 tsp matcha
  • peel and juice of 1 lime or more
  • 1/4 cup chia seeds

Topping:
kiwi, grapefruit, banana

Method:
1. Combine all ingredients except chia seeds in a high-speed blender. Blend until smooth
2. Transfer this mixture in to a bowl, add chia seeds. Stir every few minutes over the next 30 minutes until it become pudding like consistency
3. Transfer matcha pudding in to a glass jar, refrigerate for at least 3 hours or over night.
Serve with sliced fruits of your choice
