Pesto is one of the quickest and easiest dishes to make. This Pesto made of macadamia nuts, carrot tops, and fresh basil is full of flavor and will transform any dish. Full of fiber and valuable nutrition it can be used on anything and everything!
Ingredients:
1 cup Macadamia Nuts, presoaked
1/2 cup Carrot Tops, chopped
1 cup Basil
1/4 cup Royal Oil ( olive, hemp, pine nuts, pumpkin)
1 Garlic Clove
Salt/Pepper to taste
1/4 cup water
Method:
In a food processor, pulse the macadamia nuts, until finely chopped
Add garlic, herbs and oil. Pulse until combined. Now add some water, salt, pepper, and pulse until smooth
You may need to stop a few times to scrape down the sides with a spatula. Add more oil and water to achieve the desired consistency
Adjust seasoning to taste
Note: Add lemon juice right before serving to brighten the flavors. Acids cause a change in the color of green-pigmented vegetables. I prefer to serve a piece of lemon or lime on the side. Now even the next morning the dip looks vibrant green and tastes amazing. You can add cashew butter to add creaminess to pesto
